Craving Something Hot and Healing?


Happy New Year! It’s been a crazy start to 2025 with the media announcing the spread of illnesses and freezing temperatures, so who’s craving something healthy and hot? 
In The Kitchen, Trish Wall shares this Butternut Squash soup recipe that is sure to warm and revitalize. Did you know that Butternut Squash is high in Vitamin A and C? A great virus fighter and a good source of fiber. Although, we’d like to think of Butternut squash as a vegetable, this nutty, slightly sweet powerhouse is actually a fruit often used in both sweet and savory dishes.

Butternut Squash Soup
Ingredients:
3 lbs of cubed squash
1 medium onion chopped in wedges
4 cloves of garlic, peeled
1 tsp of salt
1/4 tsp of pepper
2 Tbl of Avocado oil
2 cups of chicken broth
1 cup of coconut milk or heavy cream
1 Tbl of brown sugar
Directions:
Warm oven to 425 degrees.
Coat Squash, onion, and garlic with Avocado oil.
Spread evenly on a rimmed, lined, baking sheet
Roast in oven for 35-40 minutes, tossing periodically for even roasting.
Pour chicken stock into a stock pot and warm.
Pour roasted squash, onion, and garlic into the chicken broth, reduct to simmer for 5 minutes.
Using an immersion blender, blend soup until smooth.
Add coconut cream or heavy cream.
Simmer until warm, stirring as it warms.
Serve topped with pumpkin seeds, bacon, grated cheese, scallions or your favorite topping.
